Ripoff of Charlie Papazian's Duck Slippers Helles. Trying to simplify hop additions to less partial quantities. Named for "le champeaux" area that became the market of Les Halles which in turn gave a name to a restaurant in New York of some repute. Cuz, Les Halles Helles felt too on point.
