Special Instructions

1.
Nov.11/19: 4.5/17L gallons strike. Added 19L total to temper water for an intial (pre-0.25lbs each dark malts) mash thickness of 3.7:1

Nov.11/19: 6 gallons sparge with 3g CaCl2 and 2g CaSO4

Nov.11/19 930am: Mash-in. After some quick tempering (~about 2L from the sparge water), hit 67.6C (target 67.5C) mash temp.

30 minute mash rest with just 2-row and GNO. 2ml phosphoric, 3g CaCl2 and 2g CaSO4.

After 30 min. rest, added 1/3 each of dark grains to 64.5C mash for 10 minutes more. Stirred halfway.
6.
Added remaining 5.5 gallons Sparge water at 76C to grain bed at 58C to hit 67.5C
7.
Added remaining dark malt (0.5lbs each) right away to hit 66.7C. 15 minute rest, stirred halfway.
8.
Added hops, 1/4 of 7oz liquoric stick, yeastex and whirlfloc at 15 minute. Added 3/4lb caramelised honey
9.
Added 3/4lb caramelised honey at 5 minutes
10.
Nov.11/19 3pm: 1.051 SG wort at 21.5C into FC set to 18C.
11.
Nov 14/19 415pm: Krausen slowling. Added other 1.25lbs of caramelised honey. Used ~500ml boiling water to soften. FC up to 20C
12.
Dec 5/19 645am: Began cold crashing. FC to 15C. No more visible activity.
13.
Dec 8/19: Bottling day. Added 4.7oz/1g salt dextrose for 2.37 volumes to 21L/5.5Gal at 22.8C/73F.
14.
At 12L remaining, added 8oz Cholaca and 2oz oaked caramel rum.
