Special Instructions

1.
Ferment for 24 hours @ 60F with no top pressure.
2.
Let rise to 62F under 15 psi and ferment until SG of 1.015.
3.
Raise temp to 72F until FG reached for 4 days for a Diacetyl Rest.
4.
Cold crash to 33F @ 5 psi for 4 days.
5.
Transfer to serving keg on top of gelatin for 3 days. Dump gelatin.
6.
Bottle condition 2 weeks to 2.6 volumes of CO2.
