Special Instructions

1.
Mash 7 gallons with Gypsum 2.8g, CaCl 1.8g, and Lactic 0.9mL
2.
Sparge 2 gallons with Gypsum 0.8g, CaCl 0.5g, and Lactic 0.4mL
3.
Mash half of the canned pumpkin (3 cans) with grains, bag the pumpkin
4.
Add the remaining half of the canned pumpkin (bagged), pumpkin pie spice, and brown sugar at flame out

Notes:

Lager - pours 3 fingers of foam in a dark orange. Aroma is pumpkin spice and apple cider with a little bit of wheat bread crust. Flavor is pumpkin spice wheat bread with a sweet pumpkin breath and then a lager crispness mixed in. Body is medium and nucleation is a little sharp. Overall, this is a fantastic pumpkin beer. This came from a Belgian bottle so it is a bit overcarbed but the flavor is exactly what I want. If not for the carbonation, this would be perfect. 5 stars.

Notes:

Pours 2 fingers of foam in a dark orange color. Aroma is a light hefeweizen yeast phenolic, that's it. Flavor is dominated by yeast phenolic but there is an edge of pumpkin spice if you search for it. Body is light to medium and it's quite sharp due to carbonation. Overall, the beer tastes like a wheat beer with a hint of pumpkin pie spice, so it is not successful. I want more malt flavor on this and more pumpkin spice but I don't know if that's possible with this yeast. I won't be using WB-06 again for a beer like this because it dominates. 2 stars for being just okay as a pumpkin beer, but it would only be 3 stars as a wheat beer.
