Mash of 5 gallons with 5.50g gypsum, 2.50g CaCl, 0.75mL lactic

Yeast nutrient in at 15 minutes

Flame out hops in with lid on for 10 minutes prior to chilling

Notes:

Pours 1 finger of foam that dissipates normal speed, same orange juice look. Aroma is spicy orange juice with a raw bell pepper undertone. Flavor follows the nose but there is a slight chocolate flavor, less pronounced than the last rating, and the bitterness is more present at the end. Body is fairly heavy, more than medium, and a bit sharp from the nucleation. Time has made this beer quite a bit better, mostly due to the heightened bitterness coupled with less of the chocolate. The bell pepper is intriguing but I'm not sure it's what I really enjoy, not as clean as I'd prefer. I will try a cleaner yeast in the next go round. 4 stars.

Notes:

Pours 1 finger of firm foam, looks like dull orange juice. Aroma is pineapple juice along with hop resin. Flavor is lemon Tootsie Pop with some hop resin at the end; there is a yeast funk that has a fruity chocolate edge that mingles with the hop resin. Body is medium to heavy and the carbonation is only slightly sharp. Overall, this is a good IPA but nothing special. It's a solid entry but there's not enough bitterness and not enough resin for my tastes. 3 stars.
