Pre-acidify with 15ml of lactic acid.

- Try using a little more lactic acid to get it down to 4.4

Cool to 100F.

Sour wort for 48 hours.

pH: 3.35

Pasteurize sour wort at 170F.

Begin fermentation at 64F.

Add plum puree and first dry hop at 70% apparent attenuation.

Towards the end of active fermentation, raise temp 1 degree a day.

Finish out fermentation at 68F.

Apparent attenuation: 1.012
