Special Instructions

Ca 103, Mg 11, Na 11, Cl 50, SO4 150, HCO 85

Chill wort to 68F

Diffuse pure O2 for 90 seconds

Pitched slurry from 2L stir plate starter along with one tube of Ultraferm

Set fermenter in kegerator w/ temp controller set to 68F
6.
Fermentation is active within 12 hours
7.
Raise fermentation temperature 1F every 12 hours until 85F is reached
8.
Hold at 85F 3 days total
9.
FG at 1.000
10.
Bottle with 5g champagne yeast and 6 oz corn sugar

Notes:

Still tasting great, head/retention much better now. Wonderful and perfumy. Body is a bit thin and watery, and it could use more carbonation. There is some astringency in the finish, possibly alcohol related and also a bitter plastic/phenolic aftertaste. I think this beer is just about my perfect Saison. Next time, same grain bill but target a higher OG, (1.050-55,) combine the 2 finishing hop additions, (2 oz. Saaz at 10 instead of an ounce each at 10 and 0,) same water profile, same IBUs, and skip the enzyme. Maybe split batch with Wyeast 3724 and Wyeast 3726?

Notes:

Holy hot dam. Succulent, ripe-over ripe fruit, (pineapple, orange,) ginger, clove, black pepper flavor (without associated heat.) Earthy, spicy hops, bready malt. Finishes dry, not withoutut a bit of body, though. Head, head retention and carbonation could be a bit better but I'm splitting hairs. I like this beer because it tastes good and makes me drunk.
