Special Instructions

Mash at 67c for 60 mins
2.
Heat to 93c for 15 mins
3.
Chill to 35c
4.
Add Lactic Acid to achieve 4.7 ph
5.
Pitch 8 pills of Swanson Laco Platarum
6.
Once 3.3 ph achieved boil for 60 mins
7.
Chill to 30c and rack to fermentor
8.
After 3 days, add Pureed Raspberry and Sour Cherries
9.
