Mash Steps

No mash steps in this recipe

Special Instructions

1.
Mash at 158 F - strike water at 171 in the cooler
2.
Add 5g Calcium Chloride before starting to boil
3.
"Hop Stand" - stir wort after pouring into fermentor until it reaches 180F, add 10g Mosaic
4.
Wait 10 minutes, cool to 160F and 10g more Mosaic and 10g Simcoe
5.
Wait 10 mins, chill to 150F and add 10g Mosaic and 10g Simcoe
6.
Wait 10 more minutes, then chill to 64F
7.
Start fermentation at 64F - put on heat belt when first dry-hop addition happens
8.
Add 15g Mosaic and 15g Simcoe when SG reaches 1.022/1.02
9.
Last dry-hop after fermentation is done: 15g Mosaic and 15g Simcoe for 2 days

150ppm chloride Minimum 4g/L (max 8g/L) dry hop - reduce whirlpool, increase dry hop Get rid of honey melt, add flaked wheat Sub citra for the mosaic

Notes:

2 days later down to 1.014 - looked like I got a kreusen going, but could just have been hops spreading on the top...separation lessened, though, so maybe we did get some bio-activation and movement in the wort from the heat belt?
