Special Instructions

1.
June 15/19 915am: Hit 149F/65C mash temp. 30 minute timer. Stirred every 5 minutes.
2.
Salts: 3g CaCl2 / 2g CaSO4 both Strike and Sparge (both 4.75 gallons, 18L)
3.
Acid: 6ml phosphoric Strike and 4ml Sparge
4.
Sparge 10:50am: 5 gallons/19L og 80C water to 55C grainbed = 68.7C. 10 min timer, stirred halfway.
5.
Hit 1.041 pre-boil.
6.
Added .5g whirlfloc and 1/2tsp yeastex at 15 minutes.
7.
June 15/19 145pm: Chilled wort down to 19C, sprinkled dry yeast on and into FC set to 18C
8.
June 16/19 920pm: FC to 19C, laser at 19C. No activity yet.
9.
June 17/19 6:30am: First signs of a small krausen, held off pitching more M44
10.
June 17/19 330pm: Nice white krausen, laser reading 19.3C.
11.
June 18/19 530am: Added 1oz 20.8AA% Loral Cryo dry hops. Krausen up to airlock.
12.
June 19/19 715am: Laser temp 19.8C
13.
June 19/19 9pm: Laser temp 20.1C
14.
June 22/19 915am: Added 2oz Loral and 1oz Loral Cryo DH
15.
June 26/19 830pm: Cooled FC to 14C
16.
June 26/19 705am: Cooled FC to 10C
17.
June 30/19 Noon: Bottling day. Added 5 oz and 500ml with 1g salt to 19L@21C for 19.5L@ 2.65vol.
