Boil Sugar, lemon juice and skin, cardamon, juniper berries, clove and star anise

cool the infusion and add ginger chopped, the cold mashing is between 4 and 8 hours

Filter the mashing

Re-hidrate yeast and addo to mash

Finally bottle and wait 4 days.
