Special Instructions

1.
Make a huge yeast starter days before on stir plate.
2.
Soak oak cubes in makers mark for one month prior to brewing or until they sink and put directly into secondary for 3 wks. Do not put in bourbon. Too oaky.
3.
Add vanilla/bourbon in bottling bucket or keg.
4.
I use a herms system and recirculate for 90 minutes for this brew.
5.
Boil the first sparge runnings 3 qts to a pint and add to boil. Don't scortch.
6.
Ferment at 55 degrees for 3 wks. I use a large chest freezer with a temp controller.
7.
Secondary at 35-40 degrees for 3 wks.
8.
This brew is best in 6 mos plus of cellaring.
9.
Mash 1.35 qts/lb
