Special Instructions

1.
A large starter is needed: 3,5 liters/2 vials
2.
Check pH. Should be around 5,3. Add NaHCO3 if necessary.
3.
Add 700 g demerara sugar @ during boil
4.
Add pure oxygen before pitching yeast
5.
Add enzyme (whole vial) @ day 2
6.
Add 600 g demerara sugar @ day 5
7.
Add champagne yeast (rehydrate 10 g) @ day 5
8.
Add 600 g demerara sugar @ day 7
9.
Add 600 g demerara sugar @ day 9
10.
Transfer to keg @ day 14-16 along with 1 liter dark roast coffee
11.
Lager for 6 weeks at 12-15 C and force carbonate to 2.3 vol. CO2
