Mash Steps

Special Instructions

1.
Add 17.5L strike water @ 72.5C to get a 65C mash. Hold for 60min stirring every 15 min
2.
Lauter and reserve first runnings

Add 18L sparge water @ 77C. Hold for 15 min stirring every 5min
4.
Lauter and add to kettle
5.
Add Irish Moss with 10min left in the boil
6.
Cool to 70C with a wort chiller after flame out hop additions and let sit for 20min, stirring every 2min
7.
Cool to 20C with a wort chiller, pitch an aerate yeast. Ferment at 20C.
8.
Dry-hop directly into primary at day 10
9.
At day 15, chill to 2 degrees and hold for 1 day
10.
Fine with 1tblsp of gelatin mixed in 3/4cup of water at 70C. Hold for 3-4 days
11.
Transfer to a new sanitized carboy leaving a bit of beer in the bottom of the primary. Make sure to not suck up gelatin/yeast.
12.
Boil 1 cup of water for 10min with 80g of sugar. Let cool, add to carboy and stir carefully.
13.
Transfer to bottles and let bottle condition for 3-6 weeks at fermentation temperature (20C).
