Special Instructions

1.
Heat 8.0 gal of diluted (50%) strike water to 116 degrees
2.
Add 3 grams gypsum, 5 grams CaChl, and 3 grams Epsom
3.
Assume grain temperature of 70 degrees
4.
Add 3.8 gal of strike water to tun while stirring in grains
5.
Step Mash 1: mash water temperature should be 110 degrees
6.
Let stand for 30 minutes
7.
Step Mash 2: heat remaining water temperature to boiling
8.
Add 2.4 gal of strike water to tun and let stand for 45 minutes
9.
Mash target temperature is 146 degrees
10.
Slowly drain liquid from tun and pour back on top of grain bed
11.
Continue until liquid is clear
12.
Slowly drain wort and collect 6.5 gal into boil kettle
13.
Proceed to hop schedule
14.
Boil wort for 5 min then add 1 oz of Warrior hops
15.
Boil for 40 minutes (total of 45 minutes)
16.
After 40 min, place chiller into kettle and bring back to boil
17.
Then add 1 ounce of Willamette hops
18.
Add 1 teaspoon of Irish Moss
19.
Boil for another 5 minutes
20.
Turn off flame
21.
Let wort cool to 180 degrees
22.
Then add 1 oz of Simcoe and 1 oz of Mosaic hops
23.
Cool wort to 75 degrees within 30 minutes
24.
While cooling begin to hydrate 2 packets of Safale US-05
25.
Take hydrometer reading after wort is cooled
26.
Transfer wort to primary fermenter (top off at 5 gal)
27.
Pitch vial of Clarity Ferm
28.
Pitch hydrated yeast
29.
Seal fermenter and store at 67 degrees
