Special Instructions

Mash 5.5 gallons @ 162*F for 60 mins (Heat water to 165*F then add to grains)

Continuous sparge @ 165*F until 6.5 gallons collected for boil

Boil for 60 mins

60 mins Add 1 oz Cascade hops
5.
10 mins Add spices (1/2 tsp cardamom, 1/2 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg)
6.
5 mins Add Whirfloc Tablet
8.
Cool to 70*F with immersion chiller
9.
Strain out hop materials into fermentation bucket
10.
Measure OG ____ target 1.069
11.
Pitch yeast and rouse bucket for ~5 mins
12.
Start soaking currants in rum
13.
Monitor temperature daily
14.
Monitor Gravity after 1 week and assess
15.
Once FG 1.017 is reached, rack off of yeast into secondary fermenter onto rum soaked currants
16.
FG actual ____ target 1.017
17.
ABV actual ____ target 6.7%
18.
Secondary ferment for 7 days and then bottle
