Special Instructions

1.
Heat 7.5 gallons of water to 127 F, add grain and rest at 122 F for 10 minutes.
2.
Heat to 149 F and rest for 30 minutes.
3.
Heat to 158 F and rest for 30 minutes.
4.
Heat to 170 F and rest for 10 minutes.
5.
Remove grain and let it drip back into pot while bringing to boil.
6.
Proceed with 60 minute boil.
7.
Stored in primary at 61 F for 5 days, 2 days at 68 F.
8.
Transferred to secondary and lagered for 2 months at 40 F.
