From the fine folks of Candi Syrup, Inc. http://www.candisyrup.com/recipes.html Calls for 1.5lb of D180 syrup but the homebrew store only had D45 and D90 so I will use 1lb of each. This is my second Xmas beer of the year due to moving so I'm debating on whether to add the gingerbread spice to put it into Biere de Noel territory. The mash efficiency was so poor (56% vs my usual 75% with BIAB) that this drops from a Quad down to a Dubbel.

Mash 4.5 gallons with 1.13g Gypsum, 1.58g CaCl, and 1.4mL lactic

Add whirlfloc and yeast nutrient with 15 minutes left in boil

Candi syrup and spices go in at flameout for 10 minute steep

Notes:

Pours mahogany in color with 1 finger of off-white head. Aroma is dates, brown sugar, yeast phenolic, and bit of boozy wood. Flavor is a blend equal parts yeast phenolic and barrel booze, ending with a barrel booze breath. Body is thin to medium and nucleation a bit sharp. Overall, I really like this as it isn't over the top on the barrel flavor. Balanced would be the word I would use. The base didn't live up to the quad I was hoping for, not enough malt dense flavor. 4 stars.
