Mash 4.5 gallons with 1.13g Gypsum, 1.58g CaCl, and 1.4mL lactic
2.
Add whirlfloc and yeast nutrient with 15 minutes left in boil

Candi syrup and spices go in at flameout for 10 minute steep

Notes:

Pours 1 finger of creamy foam that doesn't dissipate at all, very dark brown and clear when held to the light. Aroma is nearly identical to candi syrup, with coffee, prunes, and slightly sweet. Flavor leans towards the prunes and some alcohol that follows with a vinuous (red wine) quality, ending with a somewhat sweet breath. Body is medium and carbonation is a bit sharp. Overall, I think it's a good example of a funnel but it doesn't stand out especially. The grain bill and syrup are fine, but the yeast isn't adding the character that I want. 4 stars.

Notes:

Pours 1 finger of foam, mahogany in color but clear when held to the light. Aroma is dark fruits and bread pudding, quite good. Flavor is much different than the aroma: burnt sugar mostly, plums and dates, and then a very slight rust flavor along with some alcohol; I think the rust flavor is more of the dark fruit flavor than anything as it tastes like candi syrup essentially. Body is thin and soft. Overall it's just okay as it seems to be nothing special. I would say 3 stars.
