Special Instructions

1.
BIAB mash at 153F for 60 minutes
2.
Dunk sparged in room temperature water (should have done 170F)
3.
4 gallons boiled for 60 minutes
4.
Cooled boil kettle in bath tub with ice
5.
Siphoned to carboy and topped up with about 2 gallons to hit 5 gallons
6.
Pitched yeast starter at 70F and continued cooling carboy to 62F
7.
Added 1/2 tsp gelatin in 2/3 cup water 48 hours before bottling
8.
Primed with dextrose to 2.5 volumes - yielded 48 bottles

Ordovician

Notes:

A: Pours a clear but dark amber with a finger or two of creamy off white head. The head sticks around for a while. S: Light caramel and bready aroma with a hint of molasses. T: Caramel candy, bread and toffee flavor but not too sweet. Toffee lingers on the palate. No alcohol at all, as this is only 4% or so. M: Thin body with moderate-to-high carbonation. Highly quaffable! Overall, my best beer yet on batch 8. Very balanced and drinkable, but too thin due to low mash efficiency. Would benefit from more body and slightly more alcohol.
