Adapted from Brunette Kolsch on Rye. Used my homegrown cascade hops. 1/4 campden tablet per 5 gallons used to mash and sparge to remove chlorine from tap water

Special Instructions

1.
prepare a yeast starter to ensure rapid fermentation at cool end of temp range
2.
Mash at 149 for 90 minutes (or start at 151 and leave overnight)
3.
Sparge with 170-180F until 7.2 gallons collected in kettle.
4.
boil for 90 minutes, begin hop schedule at 60 minutes
5.
Ferment 14-21 days at mid 60's,
6.
cold crash and rack to secondary or keg and hold mid 60's F for 14-21 days
7.
carbonate at 2.7 vol

Notes:

Lots of positive comments from the axe throwers partaking during the event. Definitely would brew this again as it pleased both the general light beer drinkers and craft drinkers alike. Had enough variation from the munich and rye to add some uniqueness to the malt while the hops added just enough bitterness to provide flavor without scaring off the average beer drinker.

Notes:

took a sampling when racking to the keg. had a great, mild flavor. had subtle sweetness for having attenuated so low. very minimal bitterness with hint of citrus and black pepper. can't wait for this to carb up. wish i had a few weeks to let this cold age a bit before serving at the axe throwing event in 1.5 weeks, but it should be ready to go.
