From Craft Beer and Brewing Magazine, Summer 2014 I modified this by dropping carapils, adding triticale malt, and swapping out base malt for rice syrup solids since I have some sitting around. Also, I changed the hops to something that I have.

Mash 4.00 gallons with 2.60g Gypsum, 1.00g Salt, 2.1mL Lactic

Whirlfloc and Yeast Nutrient in with 15 minutes to go

Add 0.07oz each of Coriander, Orange Peel, and Black Pepper at flameout with 1/3 of whirlpool hops for 10 minutes, then add remaining hops for 20 minutes
4.
Dry hop goes in about 36 hours following pitch

Notes:

Pours 2 fingers of creamy foam, dark orange in color. Aroma is a hoppy, resinous, peach. Flavor is an interesting mix of mango juice, green pepper, resinous, and a sort of bitter spice, end with a touch of sweetness; the flavor is difficult to describe but resinous juice with a touch of funk is the best descriptor. Body is medium and the carbonation is slightly sharp. Overall, this is not a saison whatsoever, but it is a really good beer, more akin to a pale ale or neipa. While it doesn't hit the saison mark, it is just wonderful to drink. 5 stars.
