Mash Steps

Special Instructions

1.
Bring 2.5 gallons of water up to 169F and turn off hear source
2.
Place crushed grains in a muslin bag and steep/mash for 45 minutes at 152F
3.
Remove grains letting the liquid drain back into the pot for a moment (do not squeeze)
4.
Rinse grains with an additional 1/2 gallon of water at 170F
5.
Add additional water (if needed ) to bring volume to 2.5 gallons and bring to boil
6.
Dissolve the DME as the water approaches a boil (with lactose)
7.
One the DME is thoroughly dissolved and the kettle is up to a boil, make the first hop addition and follow the schedule
8.
Once boil is complete, Chill wort to between 180F-160F and add whirlpool hop additions
9.
Stir whirlpool additions for 30 minutes for maximum hop extraction
10.
Chill wort to 60F-70F and transfer to fermenter
11.
Ferment with Imperial Citrus Yeast between 63F-70F
