Special Instructions

1.
Prepare a yeast starter the day before brewing.
2.
Add 1.5 tsp calcium chloride to mash water
3.
mash at 145 to 148 Fahrenheit (62 to 64 celcius) for 60 minutes
4.
Ferment at 53 to 59 Fahrenheit (12 to 15 degrees Celsius)
5.
Diacetyl rest - raise temp to 68 Fahrenheit (20 degrees Celsius) for 2 or 3 days after primary fermentation is almost complete. 2 to 5 specific gravity points away from the target terminal gravity
6.
Rack beer to sanitized carboy, add gelatin and add yeast and priming sugar prior to bottling or keg instead and skip racking, yeast and priming sugar
7.
Attach CO2 line to keg and lager 4 to 6 weeks at 32 Fahrenheit (0 Celcius)
