Special Instructions

1.
A day or two prior to brewing, make a 4L starter due to high OG
2.
Heat 5.85 gallons to 164 (1.2 quarts/lb grain)
3.

4.
Add all grains and stir to break up all grain clumps
5.
Cover mash and stir every 20 minutes
6.
Heat 4.05 gallons sparge water to 170F. DO NOT GO OVER 170F!
7.
After mashing for 60 minutes, mash out/batch sparge
8.
Total volume in boil kettle (post sparge/pre-boil) ~6.37 gallons
9.
Bring to boil - follow hop schedule above
10.
Total boil time = 60 minutes
11.
At the 10 minute addition (10 minutes remaining) after hop addition, add yeast nut., Irish Moss and wort chiller
12.
After 60 minutes, remove from heat and cool to 70F
13.
Transfer to Fermentor and Oxygenate/Aerate
14.
After primary fermentation and slowed considerably, almost stopped, dry hop for 5-7 days
15.
Transfer to keg and carbonate
16.
