Special Instructions

1.
Preheat 26.3 l to 75C (half volume for 10l batch)
2.
Add bag to heated water and mash in grains (make sure stirred in correctly), cover it to retain heat and let it sit for 60min
3.
After mash, raise bag and squeeze once it appears to have drained (rubber gloves, very hot)
4.
Bring wort to the boil and begin to follow hop profile, adding moss at 10 mins to go
5.
After 60 mins, transfer to fermenter and allow to cool (quick as you can) to sub 25C before adding yeast.
6.
Note: dry hop addition only 5 days before bottling.
