Special Instructions
1.Add 2.5 Gallons of water to boil kettle
2.Mix in DME and cane sugar until completely dissolved as water heats
3.Bring to a rolling boil. Add 8 oz. ginger at 60 min.
4.Add 6 tbsp. lemon juice at 60 min
5.Add one tsp Cream of Tartar at 60 min
6.Add 1/4 ounce hops at 45 min
7.Add 6 ounces of ginger at 45 min
8.Chill wort to pitching temp according to yeast
9.Check gravity before pitching yeast
10.Add to fermenter
11.Top up to with pre boiled water cooled to pitching temp of wort
12.Pitch yeast. *A starter can be used if preferred
13.Monitor fermentation progress and check gravity at seven days.
14.Check final gravity and taste at seven days
15.Place 3.5 ounces of ginger in muslin bag or hop spider and add to fermenter for 48 hours
16.After 48 hours, taste and prepare to bottle or keg.
17.*Bottling: Add three ounces of priming sugar to 2/3 cups boiling water. Stir until completely dissolved. Cool and add to bottling vessel.
18.Transfer finished beer from fermenter to bottling vessel allowing beer to mix slowly with priming sugar. Mix gently. fill bottles.
19.* Be sure that all equipment is clean and sanitized consistently throughout brewing stages.
