Special Instructions

1.
Add about 1.5 gallons 130°F water for 30 minute, 122°F, protein rest.
2.
Add about 1 gallon 190°F water for 30 minute saccharification at 148°F.
3.
Add about 1.5 gallon 190°F water for 10 minute mashout.
4.
Sparge with about 1 gallon 168°F water
5.
Make sure volume is about 4 gallons, and bring to a rapid boil.
6.
Remove from heat and add hops, steep for 10 minutes.
7.
Cool as rapidly as possible to 70°F, pitch yeast blend.
8.
Primary 7 days at about 68°F. Rack into Secondary, rest for another 7 days.
9.
Bottle with about 6.3 oz dry malt extract.
10.
Age for at least one month, afterwards, taste occasionally until desired level of tartness reached.
11.
Open, and share with friends on a hot summer day.
