Looking to reduce the amount of crystal malt from 15% to around 7%, but still attain a similar color using a dark malt. Also used a little carapils to promote head retention and unfermentables. Also looking to use Zythos hop (blend promoted pineapple, citrus, pine) in place of Columbus to promote more citrus.

Mash Steps

No mash steps in this recipe

Special Instructions

1.
Make a 1L yeast starter the night before.
2.
Mash for 60 mins starting at 153F.
3.
Add hops per schedule.
4.
Add yeast nutrient, gypsum and Irish Moss at 15 mins.
5.
Rest for 20 mins at flameout before chilling to 75F.
6.
Whirlpool and let rest for 20 mins.
7.
Transfer to fermenter, chill to 70F, add yeast, ferment at 67F.
8.
Once yeast cap has collapsed (7 days approx), transfer to secondary on dry hops.
9.
After 7 days in secondary, keg.
