Notes:

Macerated 7 lbs, 14.7 oz of pineapple (3 pineapples), added ~1/4 gal water, and boiled to pasteurize. ~1 gal total yield at OG 1.043 / BRIX 10.9.

Full volume yield of 5 gal in fermenter with combined OG 1.0526 / BRIX 13.2.

Notes:

3.75 gal reboiled to kill bacteria, yielding 3 gal at BRIX 13.8, OG 1.056. 3 oz Nelson hops used in 30 min whirlpool starting at 156*. Estimated 1/4 gal lost to absorption and 1/4 gal lost to hop trub.

Notes:

Brewed 5/15. OG 1.052, BRIX 12.8 with 4.75 gal yield. Entire batch dropped to ~pH 4 with lactic acid. ~1 gal inoculated w/Sacch as pseudo starter. ~3.75 gal inoculated w/Lacto (single Goodbelly shot). Both fermenters stored in 76* fermentation chamber.
