5-3-18, Test during rack to secondary revealed a gravity of 1.012, indicating yeast attenuation of at least 79%.....surprise! Accordingly, ABV is already around 5.8%, which pushes this beer out of BJCP standards.....but the taste is fantastic!

  1. Pre-Boil Gravity (8 Gallons): 1.048 (post boil, it was 1.057!)
  2. Begin 90 minute boil
  3. 60 Minutes: Add 1.5 oz Saaz Hops
  4. 30 Minutes: Add .5 oz Saaz Hops
  5. 10 Minutes: Add 1/2 tsp Yeast Nutrient
  6. Flameout: Add .5 oz Goldings Hops and Whirlfloc tablet
  7. Cool wort to 72°
  8. Original Gravity:___1.057_(See notes below)_______
  9. Add yeast starter.
  10. Pre-Secondary Gravity (prior to adding 4.8 cups water): 1.0
