I'll use this as a base to try out a number of experimental hops that I purchased from YVH. I will break out the 4 gallons of finished beer into 1 gallon secondary vessels for dry hopping different varieties of hops. Water Profile: Pale Ale

Mash: 4 gallons with 6.0g Gypsum, 2.0g CaCl, 0.40g NaCl, 0.6mL Lactic
2.
Mash: 4 gallons with 6.0g Gypsum, 2.0g CaCl, 0.40g NaCl, 1.2mL Lactic
3.
Whirlfloc and Yeast Nutrient with 15 minutes to go in boil
4.
Add 2oz Tahoma as dry hop 48 hours post pitch
5.
Add 8 FL oz maple syrup (7 points) and 0.125oz coriander during whirlpool

Notes:

Suicide notes - color is the same as others with lots of foam, 3 fingers. Aroma is sweet tropical fruits like pineapple and papaya with a little maltiness. Flavor leads with a dank hop flavor followed by bready/toffee flavor and then ending with a definite bitterness that is more than expected. Body is fairly soft with only a little nucleation sharpness. There's some real hop complexity to this beer with solid malt flavor. The intrigue of this beer is enough that I really enjoy it. 4 stars for the intrigue.

Notes:

431 hop - pours dark orange with 2 fingers foam. Aroma is bready along with a tropical fruit nose, like a spicy papaya. Taste follows the nose and then an element of estery yeast comes in. Soft body to this one and a bit of nucleation sharpness. Nothing remarkable on this one, just a solid pale ale. I wouldn't be upset if I ordered this beer but I wouldn't order another. I'll go with 3 stars on this one.

Notes:

682 hop - dark orange and pours 2 fingers of foam that persists. Aroma is tropical fruit, a little bit of dank hop, sweet malts, and a yeasty breadiness. Flavor is a bitter lemon and maybe some green apple with a strong bitterness that lingers and builds somewhat. The malt flavor on this is not noticeable. The mouth feel is a bit sharp, giving it a crisp edge. I quite like this one but find the bitterness just short of overwhelming. I'd like to use the 682 hop again. 4 out of 5 as this one is pretty enjoyable.

Notes:

Tahoma and Genghis hop mix - Color is a darker orange and pours 1 finger of foam. Aroma is lemon and melon. Flavor follows the nose but is more intense of a candy lemon and has a malt flavor of toffee and caramel flavors that blends in flavor with the hops. The breath of this beer is a mild lemon pine-sol flavor, which is nice. Carbonation is good yet the mouth feel is very soft. This is too malty for what I was trying to achieve, yet I do like it. This would be a great base for a maltier sort of beer, but the way that I introduced the late stage hopping wasn't effective enough to make it an IPA. Overall, the bottle hopping wasn't so effective, so I will say 3 stars.
