Special Instructions

  1. Separate boil 2 pds malt down to 1 quartfor melanoiden and color Add back to boil og should end up at 1.090
  2. Maris otter extract from northern brewer have had nice success using this
  3. Ferment at 65 allow to rise after three days
  4. Want 5.5 g into fermenter will be aged in second use bourbon barrel
  5. Boil over with 2lb long boil , avoiding boil overs I used less water in main boil and added to fermenter to 5.25 gallons into bucket will ferment two weeks transfer to barrel
  6. temp climbed to 72 set cooler to 66 for duration of fermentation
  7. two weeks in primary , will age in barrel for a few months
  8. 7/1 bottle day fg 1.020 small bourbon fairly firm oak presence carb 2.2 4.5 gallons
