  1. 6/19: Mash @ 147?F for 60min
  2. Cool to 115?F
  3. Add unmilled Vienna malt
  4. Cover w/CO2 blanket / saran wrap
  5. Hold temp @ 105F for 3 days
  6. 6/22: Vorlauf, sparge, 7.5G into the boil kettle
  7. Swarnadwipa & Fig leaf/Lemongrass (split across 2 boils)
  8. 60min boil, 1oz Tettnang @ 60min
  9. 0.9oz Sea Salt @ 15min
  10. Chill to 75F, OG @ 1.054
  11. Into 2 3G fermentors w/ Wyeast Kolsch yeast
  12. Figleaf/Lemongrass pH: 3.5
  13. Swarnadwipa pH:
  14. Carbonate to 3.2 volumes of CO2
