Special Instructions

  1. Add minerals and/or acid to mash – pH 5.2-5.4
  2. Boil wort 90 min.
  3. Large Yeast starter – WLP 833 or 860
  4. Oxygenate well
  5. 17-21 days at 10 C – aim for 1.010-ish
  6. Rack to keg with some yeast – and lower temperature slowly towards freezing for 2 weeks
  7. Rack to fresh keg and carbonate
