Special Instructions

  1. add oak in secondary , that are innoculated with brett
  2. mash at 144 for an hour to 156 for 30min ,
  3. Brewed 5/6/18 also threw in harvest of yeast bay saison/Brett blend
  4. Set ferment chamber to 66 will let it rise at 24-36 hours
  5. Adding sugar on day 3
  6. secondary on 5/24 , pellicle forming 1.005
  7. 7/27 big fluffy cloud like pellicle should be ready for thanksgiving
