Special Instructions

1.
Make a large starter
2.
Remove 4 liters of pre-sparge wort and boil separately. Boil down to 0,75 liter. Add molasses and transfer to main boil.
3.
Add sweet orange peel and lactose @ 15 min before end of boil
4.
Add oxygen at pitch and ferment at 18-20 C for 14-16 days
5.
Add cocoa nibs to rum – let it sit for a week. Remove nibs and add to keg/secondary with beer.
6.
Medium carbonation. Lager for 8 weeks in cellar temp.
