Special Instructions

1.
Crush half of one campden tablet and dissolve in 21 qts of water.
2.
Add brewing salts per calculation to mash water.
3.
Heat 21 qts of water to 165 degrees F.
4.
Add heated water to mashtun and mash in grains.
5.
Mash in to achieve strike temp of 155 F.
6.
Mash grains for 60 minutes.
7.
Collect 13 qts of water and heat to 170 degrees F.
8.
Add brewing salts and second half of campden tablet to sparge water.
9.
Collect first runnings while sparge water is heating.
10.
Add sparge water to mashtun and let rest for 15 minutes.
11.
Run out sparge to brew kettle.
12.
After desired brew volume is collected, bring up to a boil.
13.
Add hop addition and boil vigorously for 75 minutes.
14.
At end of boil, cool wort to pitching temp.
15.
Pour off cooled wort into fermentation bucket and oxygenate.
16.
Pitch S-04 yeast into fermenter and seal bucket.
