  1. Smoke 0.6 lb of rye with cherry wood prior to mashing.
  2. Add 8 g gypsum, 2 g calcium chloride, 1 g salt to strike/sparge water (combined totals)
  3. Use lactic acid to adjust mash ph to 5.2

Notes:

Holy shit is this good. The rye adds a slight spicy character that plays well with the funkiness of the Belgian Saison yeast. Flavorful notes of fruit and bubblegum. All flavors and aromas are distinct yer pair nicely. Super clear, orange in color. Can not get enough.
