Special Instructions

  1. Keep pH at 5.4 – adjust with minerals if needed
  2. Add cold steeped De-husked Carafa II at the end of boil.
  3. Make 2 liter starter, decant – and pitch yeast after oxygenation
  4. Ferment at 20 C for 2 weeks
  5. Cold crash optional
  6. 21.5litre mash

Notes:

Strong chocolate coffee caramel taste at the start. But the strength of the flavours melt into the beer after a month or so
