To create a light and darker version, pull .75 oz of 40l and steep separately in 2 qts of water brought to a boil, then held at 150 for 30 minutes, bring back to a boil for 10 minutes. Strain and discard grains, cool and add to one fermenter which will be the dark version when splitting wort into 2 fermenter at end of full recipe boil. Save the flameout hops to add at whirlpool for the dark batch only when temp down to 170 after filling first light fermenter with 5.25 gallons of wort. Use US05 with dark and Nottingham with light. Final stats should be something like: Light: 5.8 ABV, 4.7 SRM, 35.6 IBU Dark: 5.8 ABV, 7.7 SRM, 34.9 IBU

triple batch sparge, but save a bit to finish with flye sparge until full amount collected in boil kettle

Notes:

Amazing difference with the split batch. This dark version is much better. clean flavor closer to original recipe. taste some tangerine/citrus malty base. Not as much aroma as i thought...some malty yeasty aroma. Still a solid brew. This dark version is a good pale ale, but not worth the extra effort to split a batch, just do a full pet snobs original.

Notes:

Light: nice head retention, smooth, albeit not as good as the original pete snobs. mild caramel with hint of sweetness finish after initial slight bitterness; sweet malty aroma, but lacking hops aroma and citrus flavor I expect from a pale ale. This could use some more late addition hops. cleared up nicely after some cold conditioning though. Dark straw color.

Notes:

tasted the lighter batch while transferring to the keg today. As with the darker version, this brew is difficult to assess while uncarbonated and so green. I picked up a bit more citrus flavor in this than the dark and it had a cleaner finish, with a slightly more bitter start. But overall, more reminiscent of the original pete snobs recipe at this stage. Minimal hop aroma. Big difference in hop aroma reduction without any flameout or dry hops.

Notes:

Not sure what to make of this one yet. Similar to the original Pete Snob's, but not as much citrus aroma at packaging. Not as solid as original at this phase. We'll see what happens after some carbonation and cold conditioning in the keg.
