Special Instructions

1.
Heat 8 gallons of water to 172-173; add 15g calcium chloride and 5g gypsum. Mash in with 6.5 gallons.
2.
Treating RO water with 3:1 (calcium chloride:gypsum) for mouthfeel. Works out to 9g calcium chloride: 3g gypsum for the cal cal to be around 175ppm.
3.
Need approx 3.5-4 gallons sparge water heated to 190-200. Only add half the amount of calcium chloride; the other half add directly to boil.

No hops are added to boil. 6oz whirlpool hops added at 170. Whirlpool for 25-30 minutes.
5.
First dry hop at 30-36 hours after pitching yeast, just before high krausen. 1oz each of Amarillo, Azacca & Galaxy
6.
Second dry hop on day 6 or 7. Remove first dry hop and add 1oz each of Amarillo, Azacca & Galaxy
7.
Third and final dry hop - each beer to a clean, purged keg and add 1 oz each of Amarillo, Azacca & Galaxy
8.
4 days later, cold crash for 2 days. Then rack to purged serving keg.
