Special Instructions

1.
Mash with 2.5G water with salts: 1g gypsum, 0.6g CaCl2

add the acid malt during the 145F rest (see: http://braukaiser.com/wiki/index.php?title=Weissbier_Hell)
3.
Sparge with 2G water with salts: 0.8g Gypsum, 0.5g CaCl2
4.
after boil, chill to 57F (14C)
5.
aerate, pitch yeast, and let naturally warm up to 63F (16.5C)
6.
ferment for 3-5 days, then bottle condition
