Special Instructions

1.
Add your irish moss for the last 30 minutes

At flame out, add hops, and stir to mix in. Wait 2 minutes.
3.
Begin chilling wort to pitching temperature. Goal is for late hops to be in exactly 5 minutes before dropping below 150.
4.
At about 80, strain and aerate the beer into the fermenter.
5.
Pitch yeast and ferment at 68-70F to help hold the aromatics in the beer.
6.
Dry hop 4 days prior to kegging.
