Phoenix hops which are responsible the hop flavour and aroma of this beer. The Phoenix is a type of mythological bird, something regarded as uniquely remarkable. The Peregrine Falcon is a real bird, and extra special to someone who helped me grow Phoenix hops. So this beer is dedicated to both him and the Peregrine Falcon.
