Scaled to use 6lb of Maris Otter extract, including 5% on hops (by the gram). Also, first recipe came across a little malty. Replaced LME - Munich with Briess Ashburne Mild and Victory as a substitute for Simpsons Golden Promise. Added 2 Whole Cone Styrian Goldings dry hopped.

Mash Steps

No mash steps in this recipe

Special Instructions

1.
Steep Specialty Malt in 1.5 gallons water (strike temp 160F) for 45 mins, not letting it get below 150F.
2.
Add 4 gallons of water to boil kettle and bring to 150F

Add Malt Extract, crystal malt liqour and first wort hops to kettle, round up to 6.75 gallons then bring to the boil.

Add Gypsum, yeast nutrient, Irish Moss @ 15 mins
5.
Add cane sugar @ 15mins
6.
Add hops per schedule (10 mins, flameout)
7.
Whirlpool @ Flameout for 20 mins before chilling
8.
Pitch yeast in fermenter when wort chilled to <70F.
9.
Dry hop last 7 days with 2 cones of East Kent Goldings

Notes:

Still getting the sweetness. Very slight but noticeable. Most likely due to high steep/mash temps. Hop profile is wonderful. Malt there, slightly on the high side, but not overpowering. A slight haze still, so will need to see if we can improve that (gelatin?). Overall, very happy. Just very subtle adjustments from here.

Notes:

Nice and light on the malt, lighter than when I used Dark Munich malt. Not hoppy up front ... good. Got a slight sweet initial finish,but then gets a nice clean bitterness at the very end.

Notes:

From the fermenter. 1.012FG (4.3% ABV). Temp 66F. Nice golden straw color, and clear. A little fruity on the nose. Nice bitter backbone, and just a little sweetness can be detected. Malt not overpowering.
