Special Instructions

  1. Heat strike water to 158; volume = 5.625 gal (11.25 gal) volume under false bottom. Add to grist/dough in eliminating dough balls.
  2. Measure mash ph. Add .5 tsp (1 tsp) CaCl2 and .5tsp (1 tsp) CaSO4 to bring ph down to 5.3.
  3. Carry out mash steps. Add dark grains at Vorlauf.
  4. Heat sparge water to 170 degrees. Add .5tsp (1tsp) phosphoric acid to bring sparge water pH to 5.5
  5. Vorlauf until clear.
  6. Trickle sparge approx 40 min until kettle volume is collected or gravity reads 1.010
  7. Begin 90 minute boil with hop additions.
  8. Add whirlfloc and yeast nutrient at 15 min
  9. Last hop addition is added 10 min post boil and allowed to steep 20 minutes.
  10. Cool wort to 65 deg
  11. Transfer 5.5 gal (or 11 gal) to fermenter and pitch yeast starter
