Special Instructions

1.
Strike water additions: 1g gypsum; 1g calcium chloride.
2.
Sparge water additions: 1.6g gypsum; 1.6g calcium chloride.

Mash in 145F.

(Strike was a little high. Stirred to bring temp down.)

Tap water pH: 7.4

Target mash pH: 5.6 Actual mash pH: 5.3

Sparge seemed a little sticky (consider more rice hulls?)
8.
Pre-boil Gravity: 1.035
9.
Pre-boil pH: 5.35
10.
Pre-acidify. Added 12ml of 88% lactic acid to lower pH.

Original pH: 4.3
12.
OG: 1.048
13.
Chill to 90F.
14.
Flush with carboy with CO2.
15.
Pitch lacto.
16.
Hold at 90F for 24 hours.
17.
Lower to 70F. Pitch Sacch Trois.
18.
Cold crash.
19.
FG: 1.006
20.
Approximate ABV: 5.5%

Notes:

Appearance: Golden. Pretty clear. Nice head, but doesn't stick around for long. Could be fluffier. Consider adding a little dextrin malt. Aromatics: a little bubblegum, banana that reminds me of Laffy Taffy. Clean. Palette: Clean. Pink lemonade with other ideas of citrus dancing around. Maybe a little orange and lime. Nice acidity. Tart and lean without being too much. Next time: want a more interesting fermentation character. Consider playing around with the yeast. Maybe Kolsch or Conan. Could be a little fluffier. Up the wheat (maybe some unmalted wheat). Can definitely up the oats and rye (10 percent of each?). Consider a little carapils.
