Special Instructions

  1. Bring 9.5 gallons to 157.5 f. Strike mash with 4 gallons
  2. Let mash sit for 1 hour at 146 f then collect wort
  3. Bring remaining water to 170 f and batch sparge
  4. Bring wort to boil for 15 min
  5. Add 1 ounce Saaz and boil for 1 hour
  6. Add 1 ounce cascade at last 10 min of boil
  7. Add Whirlfloc at last 10 min of boil
  8. Chill wort to 70 f and pitch starter yeast
  9. Use 7 ounces of dextrose to carbonate batch if bottling

Found out that the sour taste was from using lactic acid to lower my ph in my mash due to my very hard water. I will never use lactic acid for lowering ph again. 4 batches tainted.

Tasted after 1 week of aging in bottles. It may have an infection. I can detect a hint of malt vinegar smell. This beer is light in color and taste so there is no hiding the vinegar nose. Carbonation is good. Head retention is average. I will try another sample in 2 more weeks.
