Stronger version of Pilsner Too for the keg (fully attenuated, hits 6.7 ABV). First time trying oats to add some smoothness and body, Rice for clarity. Use kolsch yeast to approximate pilsner style with an ale brewing set-up. Best when brewed when temps allow cooler fermentation and aging (November - March).

Mash Steps

Special Instructions

1.
Mash at 151 for 90 minutes or longer (overnight okay)
2.
Raise to 170 and sparge until 7 gallons collected in kettle.
3.
Bring first runnings to boil while collecting sparge runnings
4.
Ferment 14 days at 60-65 degrees,
5.
condition at low room temperature for 1-2 months, cold crash, then package
6.
Rest @ 35F at least 7-14 days prior to serving (preferably 1-2 months)

Notes:

Took this camping. Noticeable alcohol flavor especially after drinking the brunnette kolsch on rye of mine. not overly bitter. dark straw color. Not my favorite brew. Needs either more crystal malt and hops to add flavor or less base malt to lower ABV. This would be better as a lower ABV, lighter brew.

Notes:

solid flavor after just 5 days carbing in the keg. alcohol is balanced by just a hint of hops, but not much hops aroma. More of a sweet, malty aroma. Smooth mouthfeel paired with pilsner flavor. very unique blend of pilsner, kolsch, and heavy blonde style ale. This will be a great camping brew!

Notes:

sampled while taking FG reading. crisp pilsner flavor, no esters or off flavors. Has a balance between the cream of three crops and kolsh on rye flavors leaning toward kolsh. Higher ABV than expected, but alcohol flavor isn't pronounced. I like where this is headed so far.
